I’ll be honest. I’ve never really had a problem using up leftover cake. If I happened to not finish up cake by snacking on it over a period of 24 hours or so, I’d throw it in the freezer. And the only thing better than cake? Frozen cake. So yes…leftover cake is not an issue.

Cake pops are a delicious treat. So use leftover cake or make a whole cake for the purpose of turning them into cake pops. Here’s how to do it.

How To Make Cake Pops

An optional tool is a cake pop stand. This will help the cake pops set in a perfect shape without having to lay them down.

Do you need cake pop molds? From what I can see, cake pop molds are for baking a cake in ball shapes. This is not what this recipe is for. This recipe makes a thick, truffle like piece of candy. Not a ball of fluffy cake.

Making cake pops can be a little messy, but if you walk through the steps carefully, you’ll end up with a beautiful result!

Yes! You can freeze cake pops for up to 6 weeks. You can also freeze the undipped cake pops, then allow them to defrost and dip in chocolate.

If the cake is extra moist, it may not need any frosting for a binder. If you feel like it does need something, try a small amount of cream cheese or even a touch of heavy cream. Just don’t add too much or it will get mushy.

This really depends on how big you roll the balls. I usually get between 24-30 cake balls because I roll the balls a nice size. If you roll them smaller, you make it 3-4 dozen.

Cracks in the cake ball happen most often because the chocolate is too hot and the cake ball is too cold. The large temperature difference can cause cracking. To fix this issue, allow the melted chocolate to sit for a bit before dipping. And make sure the cake balls aren’t frozen solid…just chill them enough so that they don’t fall off the stick.

You can make roll the cake balls two days in advance. Then dip the cake balls and serve within 24-48 hours after dipping.

Cakes with buttercream icing work best for this recipe, but you can do this with cream cheese frosting cakes as well. It’s just a little less sticky. As for cake, you can use from-scratch cakes, store-bought or box cake mix cakes. They’ll all be delicious!

Melting candy wafers usually takes 1 to 2 minutes. I recommend stirring every 30 seconds until melted and smooth. Be sure not to over-melt the candy coating. It will burn and become too thick to stir and coat the cake balls evenly.

Cake pops became super popular a few years ago and I never really got in on the trend. But when I found myself with these cake and frosting leftovers, it seemed like a sign. Then I wasn't even going to publish this recipe, but you asked for it! And ya know what, I think this is really useful to answer the question:

Incredible Uses For Leftover Cake

The real trick to cake pops is in the ratio of cake crumbles to frosting. The golden ratio that I've found is about 1 1/2 times as much cake crumbles as frosting. Of course, if your cake is super moist, then you'll need less frosting.

So whether you had to lop off the tops of the cake layers to make a flat styled layered cake and only have a cup or two of cake crumbles, you'll need about a 1/2 cup to a cup of frosting to turn it into cake pops. And if you make a whole cake but only eat a few pieces, then want to turn the rest into cake pops, crumble it all up and add some canned frosting until you reach that moist, scoopable consistency!

That said, you're welcome to make the carrot cake recipe and use all of it to make cake pops. The ratio remains the same. You need about 1 1/2 times as much cake as you do frosting. You'll certainly need more white chocolate or white candy melts though.

Before starting, make sure that you prep yourself a cake pop holder. Grab a cardboard box and poke holes in the bottom of it, just big enough for the lollipop sticks to stick through. I used a pair of scissors to pop the holes and tested them with the lollipop sticks to make sure that they were big enough to fit, but not so big that they just slipped right through.

You'll want to prep these in advance, because the magic happens when the warm melted chocolate hits the frozen cold cake ball so that the chocolate hardens quickly. Make sure the cake balls are cold enough before starting to dip, otherwise you'll have a runny mess!I’ve never loved traditional birthday cake with frosting… however, since cake is a birthday party must-have (at least according to the rest of my family) I make several birthday cakes every year, complete with a fair amount of frosting!

How To Make Cake Pops At Home

If you’re looking for a super simple, super delicious way to use up any amount of extra cake and frosting, I have the perfect recipe!

NOTE: If you don’t have leftover cake, you could easily just bake a cake, frost it, and continue on with the steps below to make it into cake balls.

Take balls from freezer, carefully dip frozen balls into melted chocolate and then into sprinkles or topping of your choice (I usually only dip half the balls in the chocolate as it’s less messy!)

You can use ANY type of cake, ANY type of frosting, ANY type of chocolate coating, and ANY type of sprinkle or topping — the possibilities and flavor combos are endless!!

The kids LOVE cake balls (Dave and I do too!) just as much as they love birthday cake! So the fact that they get cake balls a couple days after their birthday party is practically like an “after party” for them!
