Brownie Mix Cake Pops

Learn how to make brownie cake pops with funfetti sprinkles! This is a super easy way to make cake pops that doesn’t require special tools or too many ingredients. If I can do it, so can you! Learn how.

Recently my daughter was home sick for a few days and feeling really antsy, so I decided to do some baking with her. I wanted to do something that would be fun and easy for her to help with (she’s 3). So I settled on cake pops.

Now…believe me when I say that I am not a cook. Or a baker. I do not really enjoy cooking or baking, and I don’t do a ton of it. (My husband is a dietitian so he handles most of it!)

And I really did think these were super easy! So I promise, if I can do them, you can do them. I did not make these complicated at all and tried to keep it as simple as possible. So let’s get to it!

First bake your brownies! Follow the directions on the brownie mix you’re using to mix and bake. I added a dash of avocado oil to my mixture to help make them a bit more moist. I just poured some in, but it was probably a tablespoon.

I baked my brownies in a pan for the bottom of the recommended time frame. As soon as the edges started to get crispy, I pulled the brownies and let them cool.

Once the brownies were no longer hot to the touch—just warm—I used a knife to trim off the crispy edges. Just threw them in a bowl to snack on.

I then dished out the brownie mix into a bowl scoop by scoop. It was pretty moist, so it was already looking more like a mash. The fact that it was still warm helped, too. I stirred and mashed until it was about the consistency of mashed potatoes.

Unlike if you were using cake, you do not need to add any other ingredients to the brownies to get them to roll into neat balls. A good fudge brownie mix and a hint of extra oil gave me more than enough to work with!

Then I rolled the brownie mix into balls and arranged them on wax paper on a plate. Stick a lollipop stick in each one; I pushed mine down all the way until they hit the plate.

Pop the brownie balls and cake pop sticks into the freezer for a few hours. I had mine in there for about 2 hours, but you really just need the balls to firm up nicely.

Once you’re about ready to take them out of the freezer, pop your chocolate into a microwave-safe bowl to melt. I melted mine in 30-second increments, stirring between each and monitoring how hot the chocolate was getting. It didn’t take long!

I grabbed a bag of Ghiradelli white chocolate rounds designed for candy making and baking. It was from Joann, but I’m sure you can get them most places.

Now the fun part! Right as the chocolate is ready, take the pops out of the freezer and dip them into the bowl of melted chocolate. Cover the entire brownie ball area. Let the excess drip back into the bowl and set back on the wax paper.

If you want to add funfetti sprinkles, do it now! The chocolate solidifies very quickly, so sprinkle the rainbow sprinkles, funfetti sprinkles, or whatever you’re using onto the balls immediately.

If you want to add a second coat of chocolate, let the first coat solidify and then re-dip. Depending on how quickly you work, you might need to nuke the chocolate mix in the microwave again for a few seconds.

I let mine cool out on the table until the chocolate was solidified. This was just a few minutes. Then I set them in the fridge uncovered on a plate. I knew these would go fast, so I didn’t bother wrapping them!

Easy And Fudgy Brownie Cake Pops

These brownie cake pops were super easy to make, and they were delicious! You can make these with any brownie mix, just make sure it’s a fudge brownie mix. Look for something that says like, “super thick and moist” on the box.

I was also really impressed with the quality of the Keto mix! I usually just have to brainwash myself into thinking healthier things are good, so when my husband said they tasted like a regular brownie, I side-eyed him.

However, I agreed. They are really good. The ultimate test was giving one to my dad. He tried it with no prompting as my third-party taste tester, and he said they were “phenomenal.” So, yay 🙂

I’m an off and on calorie counter, so I often tease about calories in what I bake not counting. Although, if you are a calorie counter, I estimate one of the brownie pops has about 250 calories, and they’re so rich, fudgy and delicious that they’re worth every single calorie.

How To Turn Brownie Mix To Cake

The recipe startswith a family size box of fudgy brownie mix. Of course, if you make fantastic from scratchfudgy brownies feel free to substitute your homemade brownies in the recipe.

Once your brownies are baked, just cut off the edges and roll the fudgy brownies in to balls, put a lollipop stick in the middle and pop them in the freezer to firm up.

You could tossthe brownie edges in a freezer bag and use them in an ice cream sundae later, or do like I did and just nibble on them while you’re making the brownie pops.

Once your brownies are frozen, unwrap your Dove chocolates and melt them in the microwave. Adding a little shortening helps to thin out the chocolate for easier dipping.

I sprinkled the tops of my brownie pops with rainbowcandy coated chips that I had in the pantry, but really any sprinkles you have would be a fun addition.

I liked being able to serve the pops on a tray, but if you wanted you could decorate the other endof the pop and put them in a colander or styrofoam to chillandserve.
