A quiet revolution is underway in the sugar-laced world of desserts. Camouflage-decorated sweets have exploded in popularity over the last few years, with searches for “camo cake” hitting an all-time highearlier this year. And mainstreamdessert industryplayers have started to takenotice.

Star Duff Goldman, the Baltimore-based pastry whiz who has gained fame for his fantastical creations. Goldman’s cake product line has sold”Camouflage“ and ”Pink Camouflage“ cake mixes ($2.99 each)for more than a year—to great success: According to company figures, the two camo mixes are the second- and third-most popular of their 13 cake mixes currently on the market. (Top honors go to their “Tye-Dye” mix.)

“I don’t know what came first, our cake mixes or the explosion of camouflage cakes on the Internet, ” Goldman told us. “I was just like, ‘What can we put on the shelves that’ll just be cool? Something different?’”

Inspired by checkerboard cake designs, which became popular in the early 20th century, Goldman sought to create something “a little bit more modern, a little bit more me.” And so his “Camouflage Cake” kit was born.

As for the consumer response that followed, Duff isn’t sure it can be explained solely by the growing interest in hunting, or in the military. “It’s just that people like camo, ” Goldman said. “Everybody’s got some camo in their life somewhere.” As proof, he mentions his own pair of camouflage pants, and says that Baltimoreans who waltz into his shop, Charm City Cakes, are often outfitted in purple camo Ravens gear.

Then there are Jelly Belly’s “Camo Beans, ” which hit the candy scene in late 2013and run $2.49 for a 3.5 oz bag. A pink variety is even newer, havingdebuted in February of this year.

But corporations simply can’t compete with the sheer number of made-at-home and small business-produced camo desserts, which their creators have happily documented on social media channels.
