Kids, and big kids too, love these cool, creamy treats especially with the added fun of colorful sprinkles. These pops will make the hot days of summer a little bit better. 

Who doesn't love ice cream and cake?! And with summer almost here I couldn't pass up this cake batter meets ice cream treat. It was like getting my cake fix but without the cake. The mix of vanilla cake mix with ice cream is genius!

The flavor that I associate cake was all there along with the cool, creamy smoothness of ice cream. If you ask my grandkids, they will tell you that it was the sprinkles that they liked the most. Of course, the ice cream didn't hurt either. lol

Easy Cake Batter Popsicles

This recipe was all my granddaughter's idea. She was looking online for something fun to make and pointed to these popsicles and told me that's what she wanted for a treat. I mean, how could I say no!

Of course, I had to check out a bunch of recipes, and there were many, which to me says her choice was pretty darn good.

There were some using ice cream and some that suggested yogurt and pudding mix in lieu of the ice cream. Since I was making these pops with my 3-year-old granddaughter I wanted to use the easiest recipe possible. So the recipe with just 5 ingredients, mainly ice cream and cake mix which I had on hand, seemed perfect for us.

Some people are leery about using cake mix that isn't baked, although I've never had any problem. If this bothers you, you can heat treat it prior to using. Just spread the ¾ cup cake mix on a parchment lined cookie sheet and bake in 350 degree oven for 5 minutes. Let cool before using in recipe.

Raw flour and baking soda didn’t sound super appetizing to us, so these pops have a delicious homemade custard base instead. They’re perfect for a summer birthday (or—who are we kidding?—any day).

1. Bring the milk, ¼ cup of the sugar and the vanilla extract to a simmer in a medium saucepan over medium heat.

2. In a large bowl, whisk the cornstarch with the remaining ¼ cup sugar to combine. Whisk in the egg yolks until smooth.

Add the vanilla extract. Gradually add about a third of the hot milk, whisking constantly to combine. Transfer this mixture to the saucepan and cook over low heat, stirring constantly, just until it comes to a boil.

3. Strain the mixture into a bowl, place plastic wrap directly on its surface (to prevent a skin from forming) and refrigerate until completely chilled, about 1½ to 2 hours.

4. Fold the sprinkles into the mixture and then pour into ice-pop molds, filling each to about ¼ inch from the top. Insert sticks and freeze until solid, at least 3 hours. Store in the freezer for up to two weeks.

Although raw egg is typically not desirable in a treat -- cookie dough excluded ; ) -- that isn't the main reason to avoid using it. The egg causes problems for the batter when it freezes. Any air pockets you get from the whipped mixture will get removed in the freezing process. This especially impacts the batter that you intend to defrost and bake with later on. Instead of egg use oil for more consistent results.
