Read more...I spend a lot of time on Pinterest. My husband thinks I have a pinning problem. While that may be true (I admit nothing!) I often discover wonderful ideas and tasty treats to make with my family. My kids are loving the warmer weather of Spring and have been asking for an ice pop or ice cream bar almost every day. I rarely let them have one, so I knew they would appreciate these Rice Krispies Treats on a Stick. Though they look impressive, they only require a few simple ingredients and are the perfect thing to make with kids. If you are looking for a fun way to connect as a family and make some good memories, get everyone in the kitchen and make some for yourself.

The great part about getting kids involved in the cooking process is that you get to teach them a few things along the way. I love to sneak in learning whenever I can. While measuring marshmallows, my daughter used her math skills. What a yummy way to learn!

Melt butter over low heat in a large saucepan and add 4 cups of mini marshmallows. Stir until the marshmallows are melted.

Press the mixture into a greased 13x9 pan. Use a spatula to flatten the mixture into the pan. Allow the mixture to cool.

After cutting the pops, they will still have a rectangular shape. If you push the top corners down with your fingers you can make them rounded so they look more like an ice cream pop.

Now it's time to melt the chocolate for dipping. Pour 1 cup of semisweet chips in a microwave safe bowl and mix with ½ tablespoon of vegetable oil. Microwave until melted. Repeat the process in another bowl with 1 cup of the white chocolate chips and ½ tablespoon of oil. Microwave until melted.

Holding the treat by the stick, dip it into the melted chocolate. If you are having a child help, make sure the bowl is not hot. You may need a spoon during this process to distribute some of the chocolate evenly over the pop. Dip some of your pops in the semi sweet chocolate and some in the white chocolate chips.

Place the pops on some parchment or wax paper to cool. It was a really hot day (almost 100 degrees!) when we made these, so we popped them in the refrigerator for about 10 minutes so the candy coating could harden.

These Rice Krispies Treat Pops are just so festive and fun. I think they would be a great addition to any party. If you are looking for something patriotic for Memorial Day or the 4th of July, dip in white chocolate and use red and blue sprinkles. Instant patriotic treat!
