I made homemade cake pops once, in the traditional way where you bake a cake, let it cool, crumble it and turn it into cake pops. While those were delicious, theprocessjust took way too long. I'm impatient that way! And so is my 3 year old.
I decided to try to figure out a healthy, vegan, cake pop recipe that did NOT require baking. So while these cake pops aren't technically made from cake, they come out basicallythe same! That moist cake-y filling, surrounded in delicious chocolate. Nom nom nom.

I just about jumped for joy when my incredibly picky son not only ate the first one, but asked for MORE protein cake pops.
No Bake Cake Pops
Cake pops are pretty simple to make, especially these ones, but you will need a couple things you may not have: cake pop sticks (or lollipop sticks) and a cake pop stand. I find cake popsticks right at my local Kroger.
For a simple, inexpensive cake pop stand/holder- purchase a foam block from your nearest craft store! You can press the sticks right into the foam block and it's verystable.
If you're displaying these at a party or event, you might want something a little more visually pleasing than a foam block. Wilton sells an inexpensive cake pop stand, or you can get something a little cuterlike this tiered one!
Raw Vegan Cake Pops
First, start by mixing together the dry ingredients. Then melt ¼ cup of chocolate chips with the coconut oil. Use the double boiler method or the microwave. If using the microwave, heat for 10 seconds at a time, stirring between each cycle. Make sure not to overheat or the chocolate will seize up and no longer melt.
Mix the melted chocolate into the dry mixture. Toss in additional chocolate chips if desired. Roll the dough into balls, about 1 tablespoon each. Place onto a baking sheet lined with parchment paper.
For the chocolate coating, melt together the chocolate chips and coconut oil. Dip the end of a cake pop stick into the chocolate coating and gently press into a cake pop. Do this for each cake pop. The chocolate will help the cake balls adhere to the sticks.
Vanilla Cake Pops From Scratch
Place the sheet of cake pops into the fridge for 20 minutes. Warm up the chocolate coating a little if it has cooled and thickened. Dip each cake pop into the chocolate coating, letting the excess chocolate drip off before pressing the cake pops into a block of foam.
Other flours will not work with this recipe. Coconut flour absorbs a lot of liquid, making this batter the perfect consistency to roll up - other flours will cause the batter to be far too runny.

The first step with these vegan cake pops is to make this very simple cake. This is a cake recipe specifically made to be crumbled.
Easy Raw Vegan Cake Pops
First, combine the flour, baking soda and powder, salt, and vegan butter in a food processor and pulse it to combine. Add a can of pumpkin purée along with water and pulse again until combined. This makes a thick batter.
Keep it simple by substituting a dairy-free and/or gluten-free cake mix. Simply add the pumpkin puree and water to the cake mix and stir to combine.
Use a spatula and spread the batter into a pan with a light coating of vegetable spray. Bake it for 35 minutes until it’s done.

To make it, use a mixer to blend the vegan butter until it’s creamy. Then, add the powdered sugar and mix on low until it’s all combined. Finally, add a little soy milk (or plant-based milk of your choice) to create a nice, spreadable texture.
Once the cake is cooled, tear it into pieces and transfer it to a large bowl. Use a spatula or your hands to break the baked cake into crumbs.
Stir in the frosting with the cake crumbs and mix it all together. As you can imagine, this step can get a little messy so I recommend using a spatula.

Use a cookie dough scoop to create approximately 1″ cake balls. (I kept the balls a little bit smaller than 1″ and was able to make 45 cake balls).
It’s time to decide where you will place the freshly-dipped cake balls. You can use a block of foam or a simple cardboard box.
I used a skewer to create holes in a cardboard box, making sure to keep those holes a couple of inches apart.
How To Make Vegan Cbd Cake Pops
Unfortunately, Starbucks cake pops are not vegan. Both the cake portion and the candy coating contain animal products, like eggs and dairy.
It’s important to refrigerate the cake pops before dipping them to ensure they keep their shape. Otherwise, you’ll risk the cake pops falling apart as you invert them to dip into the melted chocolate.
Dipping the stick in melted chocolate before inserting it into the cake ball is a crucial step. The melted chocolate acts like glue as it dries, holding the cake pop in place firmly.
