Yes I know it’s a mouthful to say, but cake pop ice cream cones are so easy to make! Even if you haven’t made cake pops before, you could definitely make these. All you have to do is mix the dough, roll it into balls, place it in the cone, and decorate.

You can use a whole array of cake recipes as the base: red velvet, chocolate cake, cookies n cream, or vanilla cake pops. Thanks to the addition of the ganache, each cake bite is creamy and rich.

Gluten Free Ice Cream Cake Pops For Everyone To Enjoy

Prepare your cake according to the box or recipe instructions, bake in your parchment lined baking sheet. Your cake is done when a toothpick comes out clean in the center. Let your cake cool until it is cool enough to handle.

While the cake is at room temperature, prepare the ganache. To make a quick ganache, heat heavy cream in a heavy bottomed saucepan. When it reaches a simmer, take it off the heat and pour it over the chocolate chips. Let it sit for 3-4 minutes on the chocolate and then whisk until the chocolate has melted.

Next, prepare the ice cream cones. Then stand the cones upright in the cardboard box. If you’d like for something extra fun, you can dip the outer rim of the ice cream cones into some leftover ganache.

Cookies 'n Cream Ice Cream Cone Cake Pops Recipe (no Bake)

Dip the bottoms into the ganache and set on top of cone. Place in freezer to harden for at least one hour.

Using your hands, make fine crumbs out of your cooled cake. Mix the cake mixture with ½ cup of ganache in a large bowl.

Remove your set of cake balls and dip cake ball in a little bit of ganache and place it securely on top of the cone.

Melt some white chocolate melting wafers in a microwave safe bowl in 30 second increments and color with a small amount of gel food coloring (or use pre colored candy melts). You can do different colors in separate bowls.

Dip the top of the cake pop into the chocolate and give it a quick swirl to coat it completely. You may find that you need to heat your melted candy now and again throughout this process.

Stand your cake pops up in one of your cardboard boxes. Line the bottom with wax paper to catch the excess melted chocolate.

Once the chocolate sets you can add some melted milk chocolate and sprinkles to finish creating the ice cream cones to give them an ice cream sundae look. I would follow my cake drip method to give the illusion of chocolate syrup dripping on your ice cream cone. You can add a red jelly bean or red m&m to the top of the cake ball to look like a cherry.

If using a gluten free cake mix I would highly recommend doing the cake crumb and ganache method to help keep those cake balls from falling apart.

I am using sugar cones in this recipe, but if you want to add a stick, you should use wafer cones with the flat bottom. You will need to add a small hole to the bottom of the cone and add a lollipop stick to the bottom of your refrigerated cake balls prior to decorating.

Roll tablespoons of mixture into balls and put in the freezer for 20 minutes. Melt 250g Nestlé White Chocolate Melts in a heatproof bowl over a saucepan of simmering water. When melted, divide chocolate into 2 bowls. Add 3 drops of blue food colouring to one. Stir until coloured evenly. Dip the wide end of 26 mini waffle cones in chocolate and press a cake ball on top. Put aside to set while dipping other cones.

When set, dip cake ball in either coloured chocolate until covered. Allow excess chocolate to drip off. Sprinkle with hundreds and thousands and allow to set.

Tip: To create a holder for your waffle cone cake pops to set, punch holes in the bottom of egg cartons to allow cones to sit in an upright position. Once set, they can be stored in a container. Waffle cones are available in packs of 15 from gourmet food stores or find similar in a pack of 12 in the bakery section at Coles. You can also use lollypop sticks.
