I first heard of cake push-up pops almost two years ago. They weren’t well known back then, and when I bought the containers I had major plans to rock the dessert blogging world with these newfangled inventions. Well, I fell in hate with my blog, then I had to spend three months learning how to build a new one while resisting the urge to throw my computer off the balcony, then the book and the baby happened…and now I’m way behind the trend. There’s even a whole cookbook on how to make them, for crying out loud.

I wanted to make something fun and whimsical and unusual for ’s first birthday, so I combined the idea of cake push-up pops with the spectacular rainbow cake I’ve seen around, specifically on Sweetapolita and Whisk Kid.

If I may toot my own horn, the pops turned out pretty darn cute. They’re visually striking, and they have the classic birthday cake flavor combination of butter cake and vanilla frosting. I have to be honest, though, and say that these were pretty time-consuming. So many layers! So many cake rounds to cut and assemble!

It was all worth it, though, because these cake pops are so fun, so cute, and so absolutely delicious. With their portable, single-serving size, they’re perfect for picnics and parties.

Variations: If you don’t care about perfectly smooth, even frosting rounds, assembly will go MUCH faster! Simply cut out cake rounds, and as you layer them in the container, use a piping bag to swirl a bit of frosting on top. It might be less even, but you won’t have to worry about keeping the cake chilled in order to be able to manhandle the frosting. Another timesaver is to only do a few colors per pop, instead of trying to squeeze in all six. If you do this, you can bake the cakes in 9” rounds and not have to worry about splitting the layers. Use only three colors per pop, with two frosting layers—this will also greatly reduce the amount of frosting you need. Win-win!

Easy Homemade Cake Pops Recipe

You can make the cake pops on a stick (popsicles). To do this, create a ball, and ad the stick into the ball before dipping it in glaze and sprinkles.

Leave the sticks and ice cream cones, and serve these as cake pop truffles! Experiment with other cake mixes (like chocolate and vanilla).

Be careful when dipping the cake pops into the melted chocolate. They can easily become too heavy and the cake pop will fall off the stick. Rather use a spoon to drizzle the chocolate over the cake pop.

Best Cake Pop Recipes

If you want to make the cake pops for a large crowd, use a polystyrene box and make a stand for the cake pop sticks.

If you use fresh cake, the cake pops will keep for a week. If you keep them for a longer time, mold might develop. The older the cake, the shorter the time you can store it for.

The cake pops balls can be frozen. To serve, allow to thaw in the fridge. Then glaze and serve. You can also add the sticks before freezing if you’re serving them in this way. Store in an airtight container. They will keep up to 3 months in the freezer.

Easy Homemade Rainbow Cake

This recipe for rainbow cake pops is so easy to make simply by coloring a cake mix batter, baking it into cupcakes, combining the crumbs with frosting, stacking small discs of cake in the color order of the rainbow, and then rolling the tie-dye mixture into a round shape.

When done, stir, add ½ tablespoon of Crisco shortening and return to the microwave. Heat again in 30-second bursts on 50% power, stirring in between until the chocolate is silky smooth and falls off a fork easily.

If the chocolate is too thick, add ½ tablespoon more Crisco and heat on another 30-second burst.The consistency should be similar to chocolate sauce or dressing.

Cake Pop Insanity!: Rainbow Cake Pops

You will need both cake pop sticks and stands for this recipe. If you do not have stands and only sticks, you can simulate cake pop stands creatively.Try using an upside-down box and poke holes for the cake sticks. Be sure the sticks have something under the box to hold their weight so the melted chocolate doesn’t touch the box.

The best method to coat these bites is to use a fork and gently tap any excess chocolate on the side of the bowl. I like to use a toothpick to remove the excess melted chocolate from the bottom of the fork and then gently push the ball onto the baking sheet.
