How To Make Cake Balls Dipped In Chocolate

Cake truffles are incredibly easy to make. They’re balls of cake blended with frosting that have been dipped in chocolate, and you can decorate them in so many cute ways!

Deva Williamson, owner of Big Laugh Kitchen and winner of Food Network’s Candy Land, joins me to offer up instructions and tips to help you make these treats.

Chocolate

To get started, use your hands to mix a little bit of the frosting (about 2 tablespoons) into about two cups of cake scraps.

Knead the two together until you can’t see the frosting anymore. It should all come together into a ball that’s moist and not sticky.

Use a tablespoon-sized scoop to form the cake mixture into balls and refrigerate the balls for at least 15 minutes. If they aren’t cold, they may fall apart when you dip them in chocolate.

When they come out of the refrigerator, set a cooling rack over a cookie sheet. When you place the dipped balls on the cooling rack, the extra chocolate will drip onto the cookie sheet and you’ll be able to reuse it.

Use your finger to remove the skewer as you set the balls down on the cooling rack. When you take the skewer away, there will be a hole in the ball. Dip the same skewer back into the chocolate again and then use it to cover up the hole with fresh chocolate.

If you want to turn these into cake pops, use lollipop sticks [paid link] instead of a skewer – and leave the sticks in.

Dip each stick in the melted chocolate right before inserting it into a truffle to encourage the two to bond together as the chocolate cools and hardens.

To keep the cake pops round at the bottom, use a cake pop stand [paid link] or place the sticks in overturned styrofoam cups to cool instead of cooling them on a cooling rack.

Store cake truffles and cake pops at room temperature in an airtight container for up to one week. They can also be frozen for great cold treats!

Yes – dip a popsicle stick into melted chocolate, insert into a just-made chilled truffle, dip in chocolate, and decorate. Cool upright by using a cake pop stand [paid link] or inverted styrofoam cup with a small hole in its bottom.

Roll out the balls and freeze them for about an hour. Then, dip the balls of cake into melted white chocolate and add sprinkles if desired.

Definitely not hard, but they can be a bit time-consuming. It’s a fun project to do with friends for Christmas or with your kids around Valentine’s day.

That said, it’s good to let go of any expectations of perfection if you decide to let your kids help. Just embrace the “uniqueness” of the kids’ cake balls and go with it. They will have fun though and it’s worth it.

Easy Chocolate Cake Balls (cake Pops)

I recommend freezing the cake balls before dipping. It makes them much easier to work with and keeps them from falling apart when dipped in the warm chocolate.

Also, have everything set up with plenty of space before you begin. Have a cookie sheet lined with wax paper to set the cake balls on after dipping.

In place of a toothpick, I’ve also used a fork with success. Simply place the cake ball on the fork and coat in the chocolate. Tap the excess off and gently slide onto the wax paper with another fork.

Baked cake crumbled and mixed with just the right amount of frosting is then rolled into balls and coated in chocolate. Ooo-la-la! That process right there makes the most delicious dessert, Cake Balls! You’re basically getting a small portion of a cake in ball form. And the best part about it is that they can be decorated in a variety of ways and made with any flavor of cake! Plus with my expertise, you’ll be making perfect homemade cake balls in no time! Let’s get started:

Make cake mix according to package directions. Depending on which brand of cake mix you use, you may need to change the measurements for eggs, oil, and water. Allow baked cake to cool completely.

Mix in cream cheese, frosting, and cocoa powder. The mixture should be moist and stick together easily. If the dough is too dry, add in more frosting a tablespoon at a time.

Line baking sheet with parchment paper and using a cookie scoop, scoop cake balls onto the baking sheet. Roll each ball with your hands. If the dough sticks to your hands, you’ll need to wash them occasionally.

Microwave milk chocolate wafers in a microwave-safe bowl. Start out with 30 seconds, stir, and then melt at 20-second increments until melted. Be careful not to overcook the chocolate or it’ll seize up!

Tip: Work in small batches! Pour ⅓ of the bag of chocolate in the bowl and then once it’s used up, make another ⅓ of the bag.

If the chocolate is too thick, you can add a tiny amount of coconut oil to thin it out, just be careful not to add too much because the chocolate won’t set! You can also use Crisco shortening.

Once the chocolate is melted and the cake balls are frozen, you’re ready to dip. Place a cake ball onto a fork and dip. You can use a spoon to scoop up chocolate and pour it over the cake ball if needed. When the cake ball is covered, gently tap the fork to let any extra chocolate drop off.

Melt the white chocolate wafers the same way you melted the other chocolate. Place in a plastic Ziploc bag (careful, it can be hot!) and move the chocolate to one corner of the bag. Snip a tiny section of the opposite corner off and drizzle the top of the cake balls! Cool completely then enjoy!

The beauty of this recipe is that you can customize it to create many different flavor combinations! If you are making a variation of this recipe (using a different flavor of cake mix) leave out the cream cheese and cocoa powder. You may need to add more frosting to get the right consistency. Here are some ideas to get you started:

Now that we have the flavors out of the way we can decide how to decorate your cake balls! There are a lot of options out there, so when in doubt, keep it simple.
