Cake pops are sort of cake balls and can be linked back to lovely donut holes. Donut holes are usually glazed or covered in delicious chocolate. They are a tasty breakfast treat we have loved for years. They started the idea and helped it spread.

The main purpose of cake pops is to use up a stale or extra cake! The good news is that cake pops are denser and sweeter than the original cake. They are perfect for kid’s parties, birthdays, holidays, special treats, or just a little snack for yourself.

. Time to get those hands dirty. I had some extra cake from when I made these Gluten Free Chocolate Raspberry Trifles, so I used that for this recipe. Use your hands or fork to smush the cake into bits.

Step 4: Melt some chocolate in a microwave safe dish and dip a lollipop stick into the chocolate. Quickly push the chocolate-dipped lollipop stick into a cake ball and allow it to set. Repeat until every pop has a stick.

Step 5: Refrigerate the gluten free cake balls with the sticks for 30-45 minutes to solidify the sticks. This will keep the sticks attached to the cake balls when you dip them into the melted chocolate.

Step 6: Add your chocolate melting wafers to a small microwave safe dish. Be sure the dish is deep enough to dip the cake balls in. Melt the chocolate in 10 second increments. 

You can use milk, dark, white, or any chocolate flavor you like. If you want colored cake pops, use colored melting wafers that you can find at most grocery stores or add a few drops of food coloring.

Step 7: Dip each pop into the melted chocolate and dust with your favorite sprinkles. Place the cake pops back on the wax paper and refrigerate for 45-60 minutes. Enjoy!!

If you dipped cold cake pop balls into hot melted chocolate, it will cause cracking. When your cake balls are dipped in chocolate and warm a bit after refrigeration, they expand a little, which will crack the chocolate.

Cake pops can be made in any size, but note that the larger they are, the heavier they are, and the higher the risk of them breaking off the stick.

Cake pops will last up to 4-5 days in the refrigerator. You can get them to last longer by freezing them. You can freeze the cake balls, then defrost them when you are ready to dip them in chocolate and eat them.

Store these cake pops in an airtight container in the refrigerator. They will keep fresh for up to 4 days. You can also freeze the cake pops in a freezer safe bag. I recommend freezing the cake balls. Thaw, insert the sticks, and then dip and decorate them.

This homemade cake pop recipe might seem lengthy at first glance—but that's only because it has all the instructions for making everything from scratch: a gluten free vanilla cake, a gluten free chocolate cake, and even a simple, vanilla flavored gluten free frosting. But you can substitute any flavor of gluten free cake you like best, or even use a store-bought gf cake or one made from a packaged gluten free cake mix. Packaged frosting works great, too.

Grain Free Double Chocolate Cake Pops

A spring-loaded ice cream scoop is helpful to create portions of the cake pop mixture that are about 1 1/2 tablespoons in volume (a #50 scoop works really well). To make sure the cake balls are firm enough to hold their shape, place them in the freezer before dipping them.

You can still dip cake pops without a stick by placing each chilled cake ball directly onto the top of the melted chocolate mixture. With a dipping fork (or just a fork with long, thin tines), carefully press down to immerse the ball in the chocolate. Rotating your wrist, in a U-shaped motion, upend the cake ball, then push it back up through the chocolate.

Tap off excess chocolate on the side of the bowl, and then ease it off the dipping fork or spoon, onto a piece of parchment paper. Allow to set at room temperature.

Chocolate Cake Pops With Vanilla Frosting (gluten Free)

If you use too much frosting, the cake balls will be weepy and won't hold their shape on the stick when you dip them in chocolate, even after they've been chilled. If you use too little frosting, your cake balls will crumble when you try to dip them in chocolate.

Add the frosting to the cake crumbs slowly, since you can always add more but can't remove excess since you'll only know it's too much after you've mixed everything together. You'll know you have enough frosting mixed into your cake crumbs when the mixture is

Since the cake pop stick, or lollipop stick, is smooth and kind of slick, dip one end in the melted chocolate about 1/2-inch deep, then set it on parchment paper and let it set. That will help the cake ball hold onto the stick.
