How To Make A Unicorn Cake Pop

They were inspired by …What?!?!? … UNICORN HORN gold sprinkles that Sweet Sugarbelle sent me. OMG! So, so cute! And obviously when I saw these I knew I had to make cake pops with them!

Shape the rolled balls into horse heads. You can use wax paper to smooth the sides and help you shape them. Basically, I rolled into a long cylinder first, then bent it and reshaped the base to be thicker and the nose to be a little narrower.

To finish the horse head shape, dip some white or light-colored coated sunflower seeds in melted candy coating and then place them in position for ears. Let them dry completely and then place the heads in the freezer for about 10-15 minutes to firm up. Once firm, transfer them to the fridge to remain chilled, but not frozen.

Unicorn Cake Pops

Now, breakout the cutest sprinkles ever from Sweet Sugarbelle so you have them handy when dipping your pops. Alternatively, you can make your own unicorn horns by shaping fondant into tapered thin cylinders and then twisting them together.

Okay, let’s get to dipping. Remove 1-2 shaped cake pops at a time from the fridge. Carefully submerge the pop into a small, deep bowl of melted and fluid white candy coating. Remove and gently tap off any excess. And then before the coating dries, insert a unicorn sprinkle in position for the horn.

Start at the bottom and work in sections to apply candy coating so it looks like the unicorn mane falls on top of itself. Use a toothpick to apply the coating and layer as you go. It helps to let the coating cool and thicken slightly to hold it’s shape. Apply all the blue to the pops first and let dry. Then apply the yellow, and then the pink. Go back and tweak with more and varying thicknesses of coating if needed.

To finish the faces, draw on eyelashes and nostrils with an Americolor black edible-ink writing pen. Use a thin paint brush to draw on pink luster dust.Happy April friends!  Spring is in full-swing and today I wanted to share some of my newest creations with you!  It's a Pastel Watercolors Unicorn Cake and Unicorn Cake Pops.

With the Unicorn Cake trend going viral at every turn, I was super excited when I was asked to do a Unicorn Cake this past week (

And when my client also asked for super adorable Unicorn Cake Pops?  I felt like I had hit the jackpot!  It was just SO.MUCH.FUN.

Pastel Watercolors Unicorn Cake And Unicorn Cake Pops

This cake was comprised of three 7 layers of cake on the bottom and two 5 layers of cake on top. It was chocolate cake with vanilla buttercream.

For the pastel colors, I used Americolor Electric Blue, a mix of Americolor Violet and Regal Purple, then Wilton Pink gel colors.  I loved blending them together to get the watercolor look on the bottom!

The top tier was white vanilla buttercream with gold fondant eyes (white homemade marshmallow fondant painted with Imperial gold luster dust mixed with lemon extract).

Coolest Rainbow Unicorn Cake

For the mane, I used this technique to mix pink, purple and blue buttercream, then piped on the rosettes with a Wilton 1M tip.  The ears and horn were gum paste (I colored the horn gum paste yellow first), also painted with the Imperial gold luster dust mixed to a paint with lemon extract.  These are my favorite paint brushes.

The ribbon was real pink satin ribbon.  I don't think I've ever put real ribbon on a cake, but this order was sort of last minute and I really didn't have time to pre-make a bow and let it dry.  I played around with the real bow and ended up really loving the look!

You'll find my technique for how I cover my cake boards with glitter paper and ribbon here.  For this one, I used white glitter paper (it's not easy to see in the pics) and ½ lavender satin ribbon.

Easy Cake Pop Ideas

My daughter Sarah made 12 little horns and 24 tiny little ears for me (plus a few extras) out of gum paste.  The horns were yellow gum paste (so it wouldn't take as much gold dust) and the ears were white (obviously).  After they dried overnight,  I painted the horns and insides of the ears with the same mix mentioned above: Imperial gold luster dust mixed to a paint with lemon extract.

The eyes were drawn on with Americolor Gourmet Food Markers, the cheeks were dusted with edible Petal Dust.   I made the tiny ribbon roses from homemade marshmallow fondant. If you want to see how, check out this ribbon rose tutorial... except in teeny-tiny form.  The ribbons were probably less than ¼ wide and cut with this ribbon cutter.

The cake pops were white cake.   You can see my cake pops tutorial here.  I dipped them in white candy melts, then used the same melted candy to glue on the horns, ears and tiny roses.  They were detailed (thank goodness she only ordered a dozen), but really pretty easy-peasy!

3. Scoop out approximately 1/4 of the can of frosting and mix it into the crumbled cake. You should be able to form the mixture into balls. Be careful to not add too much frosting or your cake pops won't hold shape very well.

4. Using the Cookie dough scoop, fill the scoop with the cake and frosting mixture, release it into your hands and roll into a ball.

Unicorn Cake Pop Press

1. While you are waiting for the cake pop balls to cool count out as many of the chocolate wafers as you have cake pops and set them aside. Put the rest of the wafers in a decently-narrow but tall microwave-safe dish - set aside.

4. Using the white fondant form ears and horns for each cake pop. Lightly dust the inside of the ears with the Pink Pearl dust using the dusting brush. Dust the Unicorn horn with the Gold Pearl Dust. Set aside.

5. Line a cookie sheet with parchment paper. Take the Chocolate wafers that you counted and set aside and place them flat-side down on the cookie sheet about 3 apart from each other.

Starbucks Cake Pops Copycat (easy Birthday Vanilla Cake Pop Recipe)

1. Take the cake pops out of the refridgerator and prepare to start dipping. You want the cake pop to be chilled, but not frozen or too cold - the chocolate will crack if it is too cold.

2. Take the melting wafers in the microwave-safe dish and place them in the microwave. Microwave for 1 minute, stir, if there are still large pieces of unmelted chocolate, microwave for 10-second intervals until the chocolate is smooth.

3. First take a cake pop stick, dip it first into the chocolate and then into the cake pop. I usually do about 5 of these first before I start actually dipping the cake pop - it gives the chocolate a chance to harden and hold the cake pop on the stick better.

Ingredient Funfetti Cake Pops (using A Box Of Cake Mix)

4. Dip the cake pop into the melted chocolate being sure to cover the entire surface with chocolate. Quickly but carefully place the cake pop - stick up - onto the un-melted wafers placed on the parchment-lined cookie sheet. This helps to create a base for the cake pop which will help keep them straight and will keep them from falling over.

2. Using the colored frosting, make the unicorn mane by squeezing small bits of 'star/flower' shaped frosting onto the top of the cake pop, all around the stick.

3. Stick the horn and ears into the frosting mane, don't push too hard, you only want them to stick into the frosting, not the chocolate shell.
